Coco Rosella Parfait

Can you tell I love smoothie parfaits? Layered smoothies, chia-sorbet parfait, acai parfait- you get it. The meddling of the two textures and flavours is just so good! Creamy and refreshing, or in this case: creamy coconut and sweet, tangy rosella! You know how people are always drinking pina colada, the famous coconut and pineapple cocktail? That's a good enough assurance that coconut and sweet tangy fruit is the perfect tropical combo!

As good as pina colada is, this one's even better because this one is even more packed with vitamin C from the soursop, strawberries and rosella; the star of this parfait! This pink flower is a wonder for your cholesterol and high blood pressure. Don't you love curing your cholesterol with what practically qualifies as dessert!?!?!? (I do!)

A little heads up though: if your cholesterol's high up like the roof, you might want to sub the coconut milk with a lighter substitute like almond milk. Coconut milk tastes amazing and is so rich in flavour and vitamins, but it isn't exactly a cholesterol's best friend. So keep it light with almond milk if you can't afford the extra saturated fat. But if you can, you're in for a real good coconut treat!

Coco Rosella Parfait

Makes 2 small servings

Ingredients

Rosella smoothie layer:

65 grams frozen strawberries

150 grams frozen soursoup

160 grams frozen pineapple

1/2 frozen banana

2 tsp Herbilogy's Rosella Extract

2-3 tbsp coconut water, milk of choice or simply mineral water to help blend

Coco chia pudding layer:

1 cup light coconut milk or almond milk (plain and unsweetened)

2 tbsp chia seed

1 tbsp honey or coconut nectar

1/2 tsp vanilla extract

Method

1. Mix all ingredients for the chia pudding in a container, stir until well combined and store in the fridge overnight or for at least 6 hours.

2. The night after, blend all the smoothie layer until smooth and thick in texture like a sorbet or ice cream.

3. Place the chia pudding on a tall jar or glass and then top with the blended frozen smoothie layer. Top with your favorite fruits and enjoy!
