Turmeric Sunflower Dressing
Ingredients
1 cup sunflower seeds
3 tbsp nutritional yeast
1 tbsp freshly grated turmeric
1 3/4 tsp salt
2 cloves shallot
1/2 cup water
1 tsp apple cider vinegar
1 tsp Herbilogy's cogon grass
Directions
1. Soak sunflower seeds overnight. It will look cloudy as you let it sit through the night.
2. The next day, rinse the sunflower seeds in cold water until the water is clear.
3. Place all ingredients in a blender and blend until creamy.
4. Transfer to a seal tight container and store in the refrigerator. It will last for about 3-6 days.
This salad dressing is very versatile and works well with everything! I like massaging it into kale, as a dip for veggie crudités or dry sautéing cooked quinoa in a few tablespoons of the dressing and and then serve with seared tofu and fresh salad splashed with more of this creamy sunflower turmeric dressing. To make the seared tofu, simply season fresh tofu with a few splashes of liquid amino, then heat up a pan with a teaspoon of coconut oil. Once heated, sear tofu on both sides until golden brown.
