Moringa Cereal Milk Smoothie

Never have I thought that Moringa would be a perfect addition to a cereal based drink. When eaten alone, it has a sweet flavour and a 'malt' undertone, but then followed by a slight bitterness. BUT! When paired with milk, all that bitter aftertaste is gone and it makes the perfect malt flavour!

I've always loved cereal based desserts. Cereal milk, breakfast cereal biscuits, oatmeal cookies, anything with a whole wheat or cereal flavour, I'd go for it! Hence this smoothie is inspired by those breakfast biscuits you typically see in supermarkets.

As good as oats is for your body, those biscuits aren't exactly super healthy. Yes, they contain whole grains, but they also have tons of sugar and saturated fats that are not good for your arteries (or your waist line and blood sugar!). So I thought, why not recreate that flavour into something healthier?

This smoothie has moringa, which has been widely known to be a powerful healing herb. It helps fight free radicals, it stabilizes your blood sugar, supports brain health, protects the cardiovascular system and the liver, and more! Quite the contrary to its store-bought inspiration, right?

Adding toasted oats into this smoothie help brings out the oat slash cereal flavour more, and the almond butter helps bring an extra creaminess, just like how those biscuits has a slight buttery flavour to it. If you'd like it even creamier, add 2 tbsp!

Moringa Cereal Milk Smoothie

Serves one

Ingredients

Smoothie Ingredients

3/4 cup oat milk*

2 large medjool dates or 3 small ones, pitted

1/2 frozen banana

1 tbsp almond butter

1/2 tsp vanilla extract

2 tbsp rolled oats, toasted

Smoothie Topping

2 tbsp toasted coconut flakes

Oat Milk Ingredients

1 cup rolled oats

3 cups mineral water

Direction for Oat Milk:

1. To make the oat milk, soak 1 cup oats with 3 cups mineral water for 2 hours or up to overnight. After oats has been soaked, you'll see that the water will start to turn into a milky colour. Tip: Warm water helps speed up the process, just make sure it's not too hot!

2. Blend both the water + oats until smooth and creamy.

3. Place a cheese cloth or a nut milk bag (or better known as "tofu" cloth or strainer here) on top of a sieve and place it on top of a large bowl. Pour the blended oat mixture unto the sieve. The oat milk will start to pour into the bowl underneath, separating from the oat pulp. Push down the remaining oat pulp unto the sieve with a spoon to squeeze all the remaining liquid.

4. Store in a clean, tight container. This will make about 2 to 2 1/2 cups of oat milk that will last 3-4 days in the fridge.

Direction for Cereal Milk Smoothie:

1. Place 2 tbsp of rolled oats into a frying pan and brown for about a minute on medium-low heat, be careful not too burn (They burn fast!). Let cool for a bit. Do the same with the toasted coconut Then pit and chop your dates before blending, chopped dates will make blending easier.

2. Using the oat milk you made, add 3/4 cup of it into the blender. Then add the remaining ingredients for the smoothie and blend until creamy and smooth.

3. Pour into a glass, top with toasted coconut and enjoy!

*If you don't have time to make oat milk, simply sub for almond milk. It tastes great too!
