Summer's Pitaya Bowl
This smoothie combo was inspired by my recent obsession with Bali's smoothie bowls. Bali is a dream-come-true for health freaks like me! The island's full of organic cafes, restaurants and healthy meal choices that were DIVINE. My favourite was this smoothie bowl I had almost everyday, and of course I just had to replicate it at home to cure me from all the island food's cravings ;) Here is my take on a summer smoothie bowl, perfect to beat the heat:
Summer's Pitaya Bowl
Serves one large serving
Recipe
Half a large red dragonfruit - also known as Pitaya (frozen)
1 large frozen banana
1 cup frozen papaya
1/4 cup frozen pineapple
1/3 cup young coconut water (Thai's coco water is the best!)
Directions
Freeze all ingredients overnight in an ziplock bag or airtight containers. Blend all ingredients in a blender until smooth. Serve with load of toppings!
A little tip from me is to freeze them when they are at their ripest a.k.a their sweetest, especially the papayas. The key is in those papayas! What I've noticed is that the sweeter the papayas, the better the bowls taste!
Topping combo ideas:
Sliced kiwi, blueberries and granola (My favourite!)
Banana, strawberries and dried coconut flakes
Pomegranates and granola
Cubed mangoes, dried coconut flakes, sliced bananas and thinly sliced dried persimmons (because we all need a little of autumn's sweetness this summer ;D)
