Bliss Berry Crumble Bar

This makes a great to-go snack for kids to bring to school or for anyone on the go. You can even sub the jam for any of your favorite fruit jam like pineapples, blueberries or even apple compote. Remember that it all depends on whether or not you like the jam – but of course, the crumbs help makes it a lot extra delicious too - because who doesn't like crumbs!?!?

Bliss Berry Crumble Bar

Makes six 2 x 8 cm bar

Ingredients

Granola base:

1 large very ripe banana

60 grams rolled oats

1/2 tsp vanilla

1 tbsp almond butter

1 tbsp coconut sugar

Berry filling:

90 grams strawberry jam* or any jam of choice

1 tsp chia seed

2 tsp Herbilogy's Rosella Extract (omit if making for kids)

Crumble:

30 grams almond butter

1 tsp honey (around 10 grams)

1 tsp ground flaxseed

Two pinches sea salt (around 1/16 tsp)

Directions

Granola Base:

  1. Preheat oven to 175C and line a baking tray with parchment paper.

  2. Peel and mash the banana until it forms a puree like consistency. Then add in the almond butter, coconut sugar and vanilla. Stir until smooth.

  3. Add the rolled oats and stir to combine until the oats are nicely coated in the banana mixture.

  4. Transfer the granola base into the line baking tray and push down firmly with the back of the spoon until the base is evenly distributed and smooth. Set aside.

Berry filling:

  1. In a separate bowl, mix strawberry jam, chia seed and java turmeric.

  2. Spoon the mixture on top of the granola base that has been prepared and spread evenly. If using fresh homemade jam, wait until the jam has cool off before.

Crumble:

  1. Mix the almond butter, honey and flaxseed until it forms a paste.

  2. Crumble the mixture on top of the prepared granola base and berry spread. Bake for 25-30 minutes until the jam is set and the top starts to brown.

*Note: Buy pre-made natural fruit jam or use this recipe. Make sure to let it cool off completely before layering on top of the granola base

Homemade Strawberry Jam

Makes about 1 cup

Ingredients

2 cups strawberries, stem removed

4 tbs honey

1/8 cup water

Directions

  1. Add the strawberries into a saucepan with the honey and water.

  2. Bring to a boil and then simmer for about 15 minutes until the berries are soft and the liquid thickens. Turn of the heat and mash the fruit with a fork, you can choose to have it smooth or leave chunks of strawberries in.

  3. Transfer to a jar and leave to cool before using. Store in an airtight container. Keeps well in the fridge for up to 7 days
