Baked Pineapple Oatmeal

I can't get over how good this is. I've been making this everyday for breakfast and I just can't get enough! Juicy pineapple, gooey oatmeal and caramelised cinnamon top- it is so good.

I've been adding more hot oatmeal into my diet lately and I've been experimenting I love how warm and cozy it makes me feel!

I like my oats a certain way- soaked overnight then stewed for very long under low heat and adding in a little water at a time, a tip I learned from my dear friend. Ever since then I never like oatmeal made any other way! Though the thing is, having to watch your oats cook and adding little splashes of water a time is such a pain in the ass when you've just got out of a tough workout class and you're so hungry. I basically can't leave my oats for a long time or it'll burn. So much time invested for a bowl of lovely hot oats. Now that I make oatmeal ever morning, I decided I had to find a quick and efficient way to make hot oatmeal. Then I found baked oatmeal and now I'm hooked!

Most recipes call for a lot of butter and milk, and I substituted that with banana, almond milk and honey. Sometimes I skip the honey and add in an extra serving of fruits for just the right healthy dose of sweetness. Juice pineapples is the key here, guys! So make sure all your fruits are sweet and ripe.

The best thing is that everything can be pre-made and assembled the night before too! All you have to do the next day is to preheat the oven, bake and voila! In 20 minutes your hot baked oats will be ready just when you're fresh out of the shower! Oh the wonders of time management..

Baked Pineapple Oatmeal

Serves two

Ingredients

1/2 cup rolled oats

1/2 cup hot water

1/4 cup almond milk

2 tbsp coconut nectar or honey

2 tbsp dessicated coconut

1 tsp cinnamon

1 large over ripe banana, mashed

1 tsp vanilla extract

1/2 cup sliced pineapples (About half of a large pineapple)

Directions

  1. Preheat oven to 190C

  2. Soak the oats in 1/2 cup of hot water to soften and set aside.

  3. After all the water has been absorbed and the oats are soft, add in the vanilla, mashed banana, almond milk, dessicated coconut, cinnamon, coconut nectar and sweet leaf extract. Stir to combine.

  4. Prepare your baking dish and liNe the bottom with 1/4 cup of sliced pineapples. Then pour half of the batter to a baking dish and layer with the remaining sliced pineapples. Pour in the rest of the batter and sprinkle the top with a teaspoon of cinnamon and sliced banana coins.

  5. Bake for 20 minutes until the top starts to brown. Serve warm and enjoy with fresh berries and a drizzle of honey on top!
