Apple & Red Ginger Crisp
This is perfect medley of American classic apple pie and beautiful Indonesian spices. One bite and I felt like I was clothed in a warm hug of spices. One bite and I was taken into spice wonderland. Soothing, calming, heart warming wonderland, that is.
It's that kind of soul food that soothes your heart and and warms your tummy. Then as you sink into that pool of soft, juicy apples - the crunch comes in! It's the perfect play of texture. The crisp is somewhat like a granola. See!?!? It's so healthy, you can even eat it for breakfast, lunch and dinner! (Disclaimer: that's what I did)
There's something about this warm blend of spices that is just so comforting. My mom used to brew me a cup of stewed red ginger whenever I felt cold or when my tummy aches. A lot of nights she would make a coconut ginger soup with chewy pumpkin bubbles and we would eat it at night when the weather gets colder. We sure love our spicy ginger in this house. She knew that red ginger was the best healing herb to warm our body, our tummy and our aching muscles, and I reckon that when prepared deliciously, it's also good for the soul..
Apple & Red Ginger Crisp
Makes 2 single servings.
Ingredients
2 small medium-firm apples (I used local apples: apel malang!
1 tbsp coconut nectar or other liquid sweetener
4 tbsp coconut sugar
1/2 tsp ground nutmeg
Crumb Topping:
3 tbsp coconut oil
4 tbsp coconut sugar
6 tbsp rolled oats
3 tbsp almond flour
1 tbsp desiccated coconut (or chopped nuts)
1 tsp Herbilogy's red ginger extract
1 tsp Herbilogy's cinnamon extract
1/8 tsp ground nutmeg
a pinch of sea salt (2 pinches if using table salt)
Directions
1. Preheat oven to 175C
2. Dice the apples into cubes. Combine coconut nectar, sugar and spices. Add in the apples into the spice mixture and toss until evenly coated. Divide into two ramekins or any oven safe dish.
3. In a separate bowl, mix all the crumb ingredients together until well combined. Then crumble evenly on top of the apple mixture.
4. Bake for 30-35 minutes until top is golden and crisp. Let cool for 5-10 minutes before digging in. Now 10 minutes is over. Dig in!
