Oatmeal Banana & Walnut Bread
I'd call this a skinny banana bread. It has no oil, no fat and is literally like eating a banana oatmeal porridge in a cake form. It's just bananas, oats and walnuts.
These are so good and moist, I'm craving for them right now as I'm writing down the recipe. It's so bananaaaney and delicious! One thing I know I can't resist is a good banana bread. Seriously, can you resist the smell of a freshly baked banana bread? I can't.
Tip: I love them with caramelised bananas and Wild Friends' chocolate peanut butter. So delicious!
Oatmeal Banana & Walnut Bread
Makes 10-14 slices
Ingredients
Wet ingredients:
3 over-ripe bananas
1/4 cup coconut nectar
1 flax egg (1 tbsp ground flaxseed + 3 tbsp cold water, leave to set for 15 minutes)
1 tsp vanilla extract
1 tbsp apple cider vinegar + 1 tsp baking soda (add in at the end)
1 tsp psyllium husk (optional, add 1 more flax egg if not available)
Dry Ingredients:
1 1/2 cups oat flour*
1/2 cup unflavored protein powder (or use all oat flour)
1/4 cup coconut sugar
1 tsp baking powder
1 tsp cinnamon
Add ins:
1/4 cup chopped walnuts
Directions
1. Preheat oven to 175C and line a baking pan with parchment paper
2. Place all wet ingredients in a blender, except for apple cider vinegar + baking soda
3. Blend until smooth
4. Put in all the dry ingredients 1/2 at a time, blend until smooth
5. Mix apple cider vinegar + baking soda and pour immediately into the batter
6. Quickly blend for a few seconds
7. Add in the chopped walnuts and stir with a wooden spatula until combined
7. Transfer to the lined baking pan and bake for 30-45 minutes until a toothpick comes out clean
8. Cool on a wire rack and enjoy!
*For gluten free option, use certified gluten free oats
