Fudgy Protein Truffles
I'm a big snacker and sweet breakfast eater, but there are days when I have no time to get breakfast or make a quick snack. On those days, these little protein-packed truffles are my lifesaver! I eat them pre-workout when I'm feeling a bit lethargic and it fuels my energy for a whole 90-minutes intense workout! What I love about it is that it doesn't taste like the typical chewy and hard protein bars, these actually TASTE LIKE CHOCOLATE TRUFFLES! Sometimes I just crumble them and put on top of my banana-date ice cream or just munch on them whole, just like you do with chocolate truffles.
Fudgy Protein Truffles
makes 6-8 truffle balls
Ingredients
20 grams almond butter (I used Barney's)
15 grams cacao powder
20 grams protein powder (I used Sunwarrior's Classic Vanilla)
35 grams almond meal
1 tbsp cacao nib
1/2 tsp vanilla bean
1/4 tsp psyllium husk (to thicken, add more almond butter if not available)
Directions
1. Mix all ingredients in a bowl with a spoon until well combined and all dry ingredients are well incorporated
2. Form into 2-inch balls
