Kiwi & Cream Pie
This one's a recipe inspired by the blog's name: a kiwi and cream pie!
The soft texture of a newly ripe kiwi, creamy greek yogurt and a crumbly caramel crust- all mashed together in a single bite hmmm.....this might just be my new favorite dessert.
Why kiwi and cream? Because I love cooking healthy, uprocessed, wholesome foods but still love my decadent desserts (Oops. Guilty as charge!)
Although I used the word "cream" for my blog, I really never used cream in my recipes. Yogurt cream, yes (although they're actually just fat-free greek yogurt). Fatty whipping cream? My body physically can't handle it! I get so nauseous and dizzy if I ate too much saturated fat.
The word "Cream" here represents my love for desserts and my quest on finding new ways to indulge myself with creamy, delicious sweet treats that are wholesome and nourishing. I love knowing what goes into my body, learning about food's nutritional value, vitamins and what they're good for! That is why I just love kiwi. They're so small yet so full of vitamin C and potassium.
Five ingredients, no baking and all natural ingredients (It literally took me less than 30 minutes to make this). It's simple, healthy and so good!
Kiwi and (yogurt) cream pie
Serves one 5-inch pie
Crust
4 tbsp almond flour
6 pitted dates (I used red dates but medjool works best)
1/4 tsp sea salt
Filling
4 tbsp extra thick non-fat greek yogurt
1/2 tsp vanilla
1 tsp honey or maple syrup
1 ripe but firm kiwi, peeled and sliced
A handfull of blueberries to garnish
Directions
1. Blend pitted dates, almond flour (you could also use whole almonds) and sea salt until a crumbly sticky paste forms.
2. Transfer mixture to a baking tin and press the crust down with a spatula.
3. In a separate bowl, combine yogurt, vanilla and honey. Mix well. (I strained the yogurt overnight over a cheesecloth to make it extra thick and creamy)
4. Spoon the yogurt unto the prepared crust and smooth the surface with the back of a spoon.
5. Place your peeled and sliced kiwi clockwise, overlapping a little bit in between the slices. Top the center with a few blueberries.
6. Eat them straight or freeze for 15-20 minutes for a firmer texture (I like mine straight up, a little crumbly and the yogurt cream pours over the crust when sliced hmmm yum!)
