Breakfast Peach Crumble

Yes to having dessert for breakfast! It's a baked peach crumble!

Plus points because it's SUPER healthy and wholesome. These are warm, full of natural sweetness from the peaches and all subtle, fresh flavors. I might just found my favorite breakfast recipe.

Now this is a cafe-style brunch that's actually good for you!

The only bad thing about this dish is that there weren't enough. I regretted not making more. These are really so good, a small serving won't do it (You might want to double the recipe!)

It's the perfect hassle-free breakfast for one.

Breakfast Peach Crumble

Makes one serving

Ingredients

3 tbsp quick-cooking oats (use GF if you'd like)

1 tsp almond meal

1 tsp lemon zest

1 tsp milk of choice

1 tsp ground chia seeds

1 white peach

1 tsp honey or agave nectar (omit if your peaches are sweet enough)

1/2 tsp cinnamon

A pinch of salt

Directions

1. Preheat oven to 175C.

2. Wash and cut the peach into cubes, spread them evenly in a baking dish.

3. Zest a lemon over the cubed peach.

4. Combine oats, cinnamon, almond meal and salt in a separate bowl.

5. Sprinkle the oat mixture evenly, covering the peach.

6. Combine milk, ground chia and honey (if using) and pour the mixture over the oats so everything is evenly soaked.

7. Bake for 20-30 minutes until top is golden.

8. Let cool for at least 5 minutes before serving. Eat them as it is or top with a creamy yogurt (or vegan whipped cream).
